**This class is recommended for those who already have some experience with wheel throwing and want to level-up their skills with larger, more complicated forms.
Fermentation Pots provide the perfect environment to produce foods such as Kimchi and Sauerkraut. Over 4 days we will learn to throw, trim, join and glaze these unique pieces of kitchenware to ensure they are a food-safe and functional
How exactly does a Fermentation Pot work?
Fermentation pots have a channel (also called a ‘gallery’) around the main body of the pot, which, when filled with water and topped with a lid, forms an airtight seal.
Vegetables and brine inside the pot produce carbon dioxide as they ferment and as the internal pressure builds up, that CO2 is 'burped' out in the form of a bubble.
This simple water seal allows CO2 to escape while stopping Oxygen from entering your vessel – ensuring successful lacto-fermentation.
